National Mango Board - Recipe Contest

As the holiday season approaches, you have more to worry about than your holiday feast. What will you do with all that leftover turkey, stuffing and all the fixings?

The National Mango Board is challenging you to show them your best recipe incorporating leftovers, featuring fresh mangos.

Need some inspiration? Check out the Mango and Ham Popovers recipe, a great way to utilize leftover holiday ham and sweeten it up with some fresh mango!

Prize:
The winner will receive two boxes of fresh mangos, a cutting board and a mango-wooden bowl courtesy of the National Mango Board.

Eligibility:

To participate please follow these steps:

1) Contestants must live in the United States.

2) Recipes must use at least one fresh mango.

2) Contestants must post their original recipe and a photo on their food blog and link to this article.

3) Contestants must also post a link to their recipe in the comment section on this article.

Contest runs from November 25 through December 26, 2009. Winner will be selected by the National Mango Board based on the following guidelines:  50% recipe concept, 25% photography, 25% best use of fresh mango. Based on the criteria, the National Mango Board will select one winner from the contestant pool and post the announcement on the Foodie Blogroll Web site in January, 2010.

Legal Notice: No purchase necessary to enter. Contest void where prohibited. Contest open to members who are 18 years or older. Contest open only to currently eligible Foodie Blogroll Members. Contest open only to continental US residents. Shopping spree prize Restrictions may apply. Entries will be accepted from 11/25/2009 to 12/26/2009. Winners will be announced in January 2010..

    When I saw this contest I couldn't just ignore it as I love Mangoes in any form made in anyway and it's a very versatile fruit which can be used to make both sweet and savory dishes.     I grew up in Trinidad, one half of the twin island nation of Trinidad & Tobago where mangoes were so abundant that they would often fall off of the trees, onto streets and sidewalks.     Another one for the Raw Mango lovers ! Slice/chop + 1 tsp. red chili pepper + 1/4 tsp. salt + 1/4 tsp sugar. Let it sit for 2-4 days ! Enjoy as is like a condiment, or top on salads and tortilla sandwiches for an added kick !

    There is so much more to Mangos than Mangos lassi, as delicious as it is .. specially in the summah ! Here's another one FOR THE WINTAAH ! MANGO PIE ! 1 ready pie crust 4 mangoes sliced and cooked to semi soft with vermont maple syrup and a pinch of salt and cardamom. Add to the crust and cover the crust with thin tortilla slices (prettily cut afcoaas ) Bake to perfection at 400 for 1/2 hour to 45 mts. Enjoy as is nice and hot with a cup a cocoa, spiked coffee, glass of cold milk !

    aahllloooo/ I mean Hello folks ! Here's to the mango lovers ! Mango Chutney! Grate Mango, 1 raw and 1 ripe Cook on medium heat, add 1/4 tsp Vermont Maple Syrup, 1/4 tsp. salt, cinamon sticks (crushed), 1/4 tsp. cumin and 1/4 tsp. cardamom. Cook till thickens to liking! I like it oooie gooie, stickky !
